  • 4 x six-oz Tuna steaks Salt to taste Freshly-grnd black pepper to taste
  • 6 c. Fresh mixed baby greens washed, and thoroughly dry
  • 1 Tbsp. Extra-virgin extra virgin olive oil plus
  • 1 c. Fresh shelled peas
  • 2 Tbsp. Minced shallots
  • 1 Tbsp. Red pepper
  • 1 1/2 tsp Minced fresh mint
  • 2 tsp Extra-virgin extra virgin olive oil
  • 1 x Orange halved Minced parsley optional

Directions

  1. Preheat grill or possibly broiler.
  2. Season tuna with salt and pepper and brush with extra virgin olive oil and place on the grill or possibly under the broiler.
  3. Meanwhile, in a bowl toss together peas, shallots, peppers, mint, 2 tsp. of the extra virgin olive oil, salt and pepper, and the juice of half of the orange. Flip the tuna steak.
  4. Toss greens with 1 Tbsp. extra virgin olive oil, juice of the other half of orange, and salt and pepper. Make a mound of the seasoned greens in the middle of each serving plate. Place a serving of tuna steak on top of the greens. Top with a generous spoonful of the relish. Garnish with minced parsley if you like.
  5. This recipe yields 4 servings.
