  • 1 lb Fresh Sweet Cherries, Washed And Stoned
  • 2 Tbsp. Sugar
  • 2 Tbsp. Fresh Lemon Juice
  • 1/4 c. Dry White Wine
  • 1 pch Of Nutmeg Red (cayenne) Pepper, To Taste

Directions

  1. Here is a sweet and savory cherry sauce which is excellent with pork, game, and duck when warm. Or possibly serve it warm or possibly cool with cool sliced meats. You can prepare this sauceone day in advance. Stor in the refrigerator and rewarm over low heat before serving.
  2. In a large, heavy saucepan, combine 3/4ths of the cherries, the sugar, lemon juice and white wine. Simmer over low heat for 10 to 15 min.
  3. Allow the mix to cold slightly, then transfer it to a food processor or possibly blender and puree. Return the puree to the saucepan, add in the remaining cherries, and cook over low heat for 2 min. Season with nutmeg and cayenne pepper to taste.
  4. Yield: About 1 1/2 c. of sauce.
