Directions

  1. Mix the matzo meal, potato starch and salt together.
  2. Beat the egg yolks till thick; gradually add in the sugar, beating till lemon colored. Add in the matzo-meal mix alternately with the orange juice. Mix in the walnuts and lemon rind, and then the egg whites. Turn into a 9-inch tube pan.
  3. Bake in a 325 degree oven 1 hour or possibly till browned and the cake shrinks away from the sides of the pan. Cold on a cake rack.
  4. Serves 6 to 8.
