Directions

  1. Cut fillet into equal portions.
  2. Press steaks into a neat round shape and wrap with a slice of bacon. Secure with a toothpick.
  3. Heat 1/2 the butter in a pan and cook steaks to required degree of doneness. Remove from pan and keep hot.
  4. To make the sauce:Dice onions.
  5. Add in remaining butter and onions and gently cook for 1 minute, then add in brandy and flame. Reduce by half, add in beef stock, cream and mustard and reduce till a sauce consistency is obtained.
  6. Note:You can thicken this sauce slightly with cornflour if you like.
  7. Return steaks to pan for 1 minute to heat through, season, and finish with minced parsley.
  8. * Serve with Potato Casserole and fresh green salad.
