Farmhouse Chicken Fricassee Recipe

Ingredients

  • 1 Tbsp. unsalted butter
  • 1 1/2 tsp vegetable oil
  • 1 x 3-1/2 lb. chicken cut in serving pcs
  • 1/2 tsp salt
  • 1/4 tsp freshly grnd pepper
  • 3 med carrots cut in 1-inch pcs
  • 2 x celery ribs cut in 1-inch pcs
  • 1 sm onion cut in 4-6 wedges
  • 2 Tbsp. all-purpose flour
  • 1 c. chicken stock or possibly canned broth
  • 1 tsp dry marjoram
  • 1 Tbsp. chopped fresh chives or possibly parsley

Directions

  1. Heat the butter with the oil in the pressure cooker. Add in the chicken in batches as necessary, and season with salt and pepper. Cook uncovered over medium heat, turning till browned well on both sides...5-7 min per batch. Carefull pour off all but 1-Tbsp. fat. Add in the carrots, celery and onion. Sprinkle on flour and stir in. Cook, stirring 1 to 2 min. Add in stock or possibly broth and marjoram. Cover and bring to low pressure. Reduce heat to stabilize pressure and cook we min...if your cooker has a fixed pressure regulating weight, cook at high pressure for 9 min. Reduce pressure. Transfer the chicken and vegetables to a platter. Garnish with the chopped chives. Skim the fat from the pan juices and pass separately to spoon over the chicken and vegetables.
