Emeril's Savory Pie Crust Recipe

Ingredients

  • 8 ounce all purpose flour (about 1 1/2 c., plus 2 Tbsp )
  • 1/2 tsp salt
  • 1 stk cool unsalted butter, cut into 1/4 inch pcs
  • 2 Tbsp. solid vegetable shortening
  • 3 Tbsp. ice water

Directions

  1. Sift the flour and salt into a large mixing bowl. Incorporate the butter pcs and shortening by hand, working the fat into the flour with your fingertips till the dough starts to come together and form small pea-shaped pcs. Work the ice water into the dough with your fingers till it just comes together, being careful not to overmix. Form the crust into a disk, wrap tightly in plastic wrap and place in the refrigerator to rest for at least 30 min before rolling out to fit into a pie pan.
  2. Makes one 9" or possibly 10" piecrust.
