Ingredients
- 1 c. Rice, Raw
- 3 Tbsp. Oil
- 3 x Cloves garlic, chopped
- 1 med Onion, minced
- 2 c. Chicken broth
- 2 c. De-boned chicken, cooked and cut up
- 1/4 tsp Saffron
- 2 Tbsp. Capers
- 1 sm Canned peas
- 1 x Tomato, minced Salt, to taste
Directions
- Saute/fry rice in oil with garlic and onions till brown; stirring continuously. Add in the rest of the ingredients. Pour into a greased baking dish and bake at 400 degrees for 45 min covered and an additional 10-15 min uncovered. Any seafood such as shrimp, mussels or possibly squid can be added and is delicious.
