  • 1 chicken, cut in pcs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (10 ounce.) jar apricot preserves
  • 1/4 c. prepared yellow mustard
  • 2 teaspoon gated lemon peel
  • 1/3 c. fresh lemon juice
  • 1 lemon, sliced thin

Directions

  1. Place chicken parts skin side up in a shallow baking pan. Sprinkle with salt and pepper. In a small sauce pan mix preserves and mustard and heat, stirring about five min. Stir in lemon peel and lemon, juice. Pour sauce over chicken and bake at 375 degrees for 30 min. Top each piece of chicken with lemon slice. Baste, if necessary, during baking.
