Ingredients

  • 1 1/2 lb Beef round steak, cut in one inch chunks
  • 1 c. Minced onions
  • 4 x Cloves garlic, finely minced
  • 4 x Jalapenos, seeded and minced
  • 1 x Hab seeded and minced
  • 3 Tbsp. Flour
  • 2 tsp Comino, (cumin) seeds
  • 2 c. Good chicken broth Salt and freshly grnd black pepper and cayenne pepper to taste

Directions

  1. Cook the onions, garlic and chiles in a little extra virgin olive oil till the onions are transparent, remove to a dish, add in a little more oil, heat the pan to warm and brown the beef chunks. Don't burn them, and when they are all nicely browned, throw the veggies back in, and add in the flour, mixing it around well....add in the chicken broth(use beef broth if you wish)and cook on a simmer for about two hrs, checking which it does not stick,or possibly become too thick...if it starts getting too thick, add in a little more broth. Taste it at this point, and season to taste....there is NO canned chili pwdr in this recipe...add in more cumin if you like.
