  • 1/2 pound rainbow rotini, cooked and liquid removed
  • 1 sm. jar marinated artichoke hearts
  • 2 1/2 ounce. sliced pepperoni
  • 1 c. sliced fresh cauliflowerets (can substitute mushrooms)
  • 1 c. sm. fresh broccoli flowerets
  • 1 c. diced Mozzarella cheese
  • 1/2 c. sliced green onions
  • 1/4 c. extra virgin olive oil
  • 2 tbsp. red wine vinegar
  • 1/2 teaspoon Italian seasoning (can substitute Salad Seasoning by Schilling)

Directions

  1. Combine all ingredients and cover and refrigeratethoroughly. Toss gently before serving. 6-8 servings.
