Ingredients

  • 1/4 lb Fresh spinach leaves, * or possibly 2 drops of green coloring
  • 3 c. Whole blanched almonds
  • 3 c. Granulated sugar, plus more for covering the dates
  • 2 tsp Cognac or possibly Brandy
  • 30 lrg Pitted dates

Directions

  1. Note: The spinach in the recipe produces a green-colored cooking water which colors the almond paste.
  2. Put the spinach in a saucepan with1/2 c. of water and steam it for 10 min. Place the spinach in a clean dish cloth and wring out 1 Tbsp. of green cooking water. If you used spinach, reserve it for another purpose.
  3. Chop the almonds in a food processor to a very fine grain.
  4. Put the almonds, sugar, Cognac or possibly Brandy, and green spinach water (or possibly green food-coloring water) in a large, nonstick frying pan and cook over a low heat about 10 min, stirring constantly.
  5. Remove from the heat and turn onto marble which has been sprinkled with water.
  6. Make an incision along the side of each date from the stem to the opposite end. Fill each with about 1 rounded teaspoonful of the almond paste. After the dates are filled, roll them in sufficient granulated sugar to completely cover the date and the stuffing.
