Ingredients

  • 1 pound dates, seeded
  • 1 ounce. chilies, dry
  • 3 cloves garlic, peeled
  • 1/2 ounce. ginger, peeled
  • 2 c. white vinegar
  • 1/2 c. sugar
  • Salt to taste

Directions

  1. Remove seeds from dates, grind them and set aside. Grind the chilies, garlic, ginger, and half the amount of the vinegar and set aside.
  2. Make a syrup of sugar and remaining vinegar. Add in grnd ingredients and salt. Boil together till thick. Let it cold, then add in dates and store covered, in the refrigerator.
  3. Variation: For Tomato Chutney, use 1 lb. fresh tomatoes, increase sugar to 2 c., and reduce vinegar to 1 c.. Keep all remaining ingredients in the same proportions.
