Dae's Summer Alfredo Recipe

This is a light Alfredo with spinach and a hint of lemon to give it a lovely fresh taste without the heaviness of a normal Alfredo Sauce.

Ingredients

  • 1 to 2 tsp garlic..minced
  • 1 to 2 Tbsp... olive oil
  • 1 tsp ... torn or chopped basil
  • 1 to 2 regular size jars of your favorite Alfredo Sauce or 4 cups of homemade Alfredo sauce
  • 1 bunch or 2 cups of *fresh spinach
  • 1 to 2 lemons... juice and zest
  • Serve over Gnocchi or Ratitora pasta
  • Depending on the amount of sauce you use is how many it will feed.
  • One jar = 4 servings...etc

Directions

  1. put pot of water on to boil pasta
  2. Saute garlic and basil in olive oil
  3. Add Alfredo Sauce to garlic,basil,olive oil. Heat till a high simmer.
  4. Drain pasta reserving about a 1/2 cup of pasta water to add to Alfredo is sauce is too thick.
  5. Add spinach,lemon juice and zest at the end to keep the freshness of both the lemon and spinach.
  6. Serve over Gnocchi or Pasta with a good crusty bread
  7. Enjoy!
