Ingredients

  • 1 1/2 c. AM Whole Wheat Flour
  • 2 tsp Non-alum baking pwdr
  • 1/2 tsp Grnd ginger
  • 2 x Large eggs
  • 1 1/2 c. Buttermilk, Or possibly...
  • 1 c. -(Buttermilk -AND- 1/2 c - Water)
  • 1/4 c. Maple syrup or possibly honey
  • 1/4 c. AM Unrefined Vegetable Oil
  • 1/2 c. Finely minced pecans Strawberry-banana sauce (see recipe below) Plain yogurt
  • 1 1/2 c. Maple syrup
  • 1 c. Sliced bananas
  • 2 c. Strawberries (hulled and halved)

Directions

  1. Waffle: Combine dry ingredients; stir well. Beat Large eggs till thick and lemon colored. Add in flour mix, buttermilk, syrup and oil. Beat till smooth. Cook on warm, lightly oiled waffle iron, sprinkling the top with minced pecans before cooking. Serve with topping of the following sauce and plain yogurt.
  2. Strawberry-Banana Sauce: Combine all ingredients in a heavy saucepan.
  3. Cook over medium high heat 10 min, stirring occasionally, serve warm.
