Crepe Batter With Beer Recipe

  • 1½ c. (250 g) sifted flour
  • 3 large Large eggs
  • 2 tbsp (40 g) powdered sugar
  • 8.5 ounce (25 cl) lowfat milk
  • 8.5 ounce (25 cl) pale ale
  • 2 2/3 tbsp (40 g) butter
  • 2 2/3 tbsp (4 cl) dark rum
  • 1 healthy pinch salt

Directions

  1. Mix flour, sugar, lowfat milk, Large eggs, 3 1/3 tbsp (5 cl) beer and rum in well
  2. Mix and beat ingredients till batter is very smooth well smooth.
  3. Add in already melted butter and mix again
  4. Add in rest of beer, mix and allow to rest for 1 hour
  5. Beat batter again right before cooking
  6. Heat frying pan over very high heat
  7. Heat dab of butter in frying pan
  8. Lower heat slightly and add in one ladleful of batter
  9. Tip frying pan steeply to distribute batter uniformly
  10. Cook 2 min on one side till crepe is nicely browned
  11. Flip crepe and cook another 2 minutes
  12. Serve warm
