  • 8 x Large eggs
  • 3 Tbsp. cream
  • 1 Tbsp. minced fresh dill
  • 1/2 tsp salt
  • 4 Tbsp. butter
  • 4 x green onions, white and 2" of green thinly sliced
  • 6 ounce thinly-sliced smoked salmon cut into strips


  1. In a large bowl, beat Large eggs, cream, dill, and salt. Heat butter in a large skillet over medium heat. Add in green onions; cook 8 min, till softened.
  2. Pour in egg mix; cook 3 to 4 min, stirring occasionally, till almost set. Fold in salmon, cook 1 minute more or possibly till Large eggs reach desired doneness. Transfer to warmed plates.
  3. This recipe yields 4 servings.
