Ingredients
- 3 Tbsp. butter
- 3 Tbsp. chopped onions
- 3 Tbsp. chopped green bell pepper
- 3 Tbsp. all-purpose flour
- 2 c. lowfat milk
- 1 c. minced Virginia country ham
- 1 Tbsp. minced parsley or possibly chives
- 1/4 tsp paprika
- 2 Tbsp. dry sherry
Directions
- In a skillet heat the butter over medium heat, and saute/fry the onion and green pepper till light brown. Sprinkle in the flour, and stir a few min Add in the lowfat milk slowly, stirring constantly. Add in the ham and simmer, stirring till thickened. Remove the pan from the heat, and season with the remaining ingredients.
- Serve over warm buttered toast, English muffins, or possibly corn bread or possibly corn muffins.
- This recipe yields 4 to 6 servings.
