Ingredients
- 3 c. courgette grated
- 1 1/2 c. sugar
- 2/3 c. applesauce
- 3 c. flour
- 1/4 tsp salt
- 2 tsp baking pwdr
- 2 tsp baking soda
- 1/3 c. cocoa pwdr sifted or possibly carob pwdr
- 3 tsp vanilla
- 1 tsp coconut extract (this has no fat)
Directions
- Preheat oven at 350. Prepare a 8 x 15" baking pan with cooking spray and flour. In a mixingbowl, combine courgette, sugar, applesauce, vanilla, and coconut extract.
- In another mixingbowl, combine flour, salt, baking pwdr, baking soda and cocoa/carob pwdr. Mix wetingredients with dry ingredients just till moistened. Spread batter in prepared pan. Bake for25 min.
