Ingredients
- 2 red bell peppers â sliced
- 1 onion â sliced
- 1 zucchini â sliced
- 6 oz. jar of marinated artichoke hearts â plus about ¼ of the marinade
- ½ cup of pitted black olives
- 1 tablespoon of capers â plus a little of the caper juice
- Marinade:
- Juice of 1 lemon
- Juice of 1 lime
- ¼ cup of vinegar
- ½ tsp. of salt
- Dashes of red pepper flakes
- 1 tablespoon of sugar
Directions
- Place all of the vegetables in a bowl. Prepare the marinade and pour over the vegetables.
- Refrigerate for at least 1 hour before serving.
- Serve with a provolone cheese, blue cheese, feta cheese, gorgonzola cheese, parmesan or Romano cheese shavings.
