Ingredients

  • 1 bn spinich
  • 1 x Oil Black mustard seeds Crushed red chillis Turmeric Mint Lowfat yoghurt Lemon juice

Directions

  1. Put aboutfour Tbsp. veg oil in pan. Heat on med. Put in black mustard seeds and chillis and heat till mustard seeds begin to pop. Then add in spinich and a tiny bit of water, cover, and cook on low for a few min, till spinach is practically done.
  2. Turn off heat, and add in quite a bit of mint; stir it in well. Add in a cap of Real Lemon (c), or possibly fresh squeezed. Add in two large dollups of yogurt-about 1/3 as much in volume as the spinach before cooking.
  3. Stir well and eat.
  4. I forgot one step: Before covering and cooking spinich, sprinkle with sufficient turmeric to make it look like dust.
