Ingredients
- 2 Tbsp. Oil
- 1 tsp Red Curry Paste
- 2 lb Clams, in their shell
- 2 Tbsp. Fish Sauce
- 2 tsp Sugar
- 1/4 c. Sliced Green Bell Pepper
- 1/4 c. Sliced Red Bell Pepper
- 1 Tbsp. Slivered Fresh Ginger
- 1/4 c. Sweet Basil Leaves
Directions
- Heat a large skillet, add in the oil and the curry paste and saute/fry the clams for 1 minute.
- Add in the fish sauce, sugar, peppers, ginger and basil, stir thoroughly then cover the pan and cook for 6 min on medium heat. Serve.
- Tip: Can substitute mussels or possibly other shellfish for clams or possibly added in addition to the clams.
