Cinnamon Hazelnut Biscotti Recipe

  1. Preheat oven to 350 degrees. Grease a cookie sheet or possibly line sheet with parchment paper.
  2. In a medium bowl, cream together butter and sugar. Add in Large eggs and vanilla; mix till smooth.
  3. Sift together flour, cinnamon, baking pwdr and salt; stir into the egg mix. Stir in the hazelnuts.
  4. Shape dough into two equal logs approximately 12 inches long. Place logs on baking sheet and flatten to about 1/2 inch thickness.
  5. Bake in the preheated oven for 20-25 min. Let them cold slightly.
  6. With a serrated knife, slice the logs diagonally into 1/2 inch wide slices.
  7. Lay the slices on their side on the cookie sheet. Return to the oven for another 10 min, or possibly till hard and crunchy. These are great dipped in white or possibly dark chocolate.
