%20and%20the%20waiter%20brought%20over%20an%20extra%20table%20so%20that%20we%20could%20arrange%20our%20cookie%20exchange%20treats%20for%20their%20photo%20shoots.%20It%20could%20only%20be%20a%20meeting%20of%20food%20bloggers.%20Thanks%20to%20the%20efforts%20of%20Holly%20of%20PheMOMenon%20and%20Maria%20of%20Two%20Peas%20and%20Their%20Pod,%20I%20enjoyed%20a%20couple%20of%20hours%20of%20food,%20blogging,%20and%20everyday%20life%20chit-chat%20with%20Kalyn%20of%20Kalyn%E2%80%99s%20Kitchen,%20Barbara%20of%20Barbara%20Bakes,%20Becky%20of%20Vintage%20Mixer,%20Tiffany%20of%20Food%20Finery,%20Chris%20of%20Mele%20Cotte,%20Cristie%20of%20The%20Table%20Runner,%20and%20her%20daughter,%20Candace,%20of%20A%20Little%20Blog%20at%20the%20Wild%20Grape%20Bistro%20in%20Salt%20Lake%20City.%20The%20food,%20ranging%20from%20The%20Grape%E2%80%99s%20Egg%20Benedict,%20complete%20with%20a%20thick%20slice%20of%20ham,%20to%20Nutella-Stuffed%20Brioche%20French%20Toast%20was%20delectable%20and%20beautifully%20presented.%20The%20cookies%20spoke%20of%20the%20holidays%20%E2%80%93%20shortbread,%20chocolate,%20mint,%20meringue%20%E2%80%93%20and%20lasted%20less%20than%20one%20hour%20in%20my%20house.%20We%E2%80%99re%20not%20known%20for%20moderation%20around%20the%20holidays.%20It%20was%20truly%20a%20wonderful%20way%20to%20kick%20off%20the%20festivities%20of%20December.%3C/p%3E%3Cp%3EMy%20offering%20to%20our%20festive%20brunch%20was%20a%20cookie%20that%20I%20found%20on%20the%20Food%20Network%20site.%20Typically,%20I%20can%E2%80%99t%20help%20but%20tweak%20recipes%20to%20my%20liking,%20but%20I%20did%20not%20change%20this%20one%20iota.%20The%20dough%20is%20made%20with%20a%20mixture%20of%20sliced%20almonds,%20confectioners%E2%80%99%20sugar,%20cinnamon,%20and%20lemon%20zest.%20A%20light%20meringue%20is%20spread%20on%20top%20of%20each%20cookie%20and%20topped%20decoratively%20with%20almond%20slices.%20The%20result%20is%20a%20crisp,%20light,%20and%20flavorful%20cookie%20that%20happens%20to%20be%20gluten-free.%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20combine%201/2%20cup%20sifted%20confectioners%E2%80%99%20sugar,%2010%20ounces%20sliced%20almonds%20(3%20heaping%20cups),%20and%201%201/4%20teaspoons%20ground%20cinnamon.%3C/p%3E%3Cp%3EProcess%20until%20the%20nuts%20are%20finely%20ground,%20with%20a%20few%20larger%20pieces%20still%20present.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20(or%20bowl%20of%20a%20stand%20mixer),%20whip%203%20large%20egg%20whites%20on%20high%20speed%20until%20they%20hold%20soft%20peaks,%20about%201%20minute.%20Gradually%20add%201%203/4%20cups%20confectioners%E2%80%99%20sugar,%20with%20the%20motor%20running,%20until%20the%20whites%20are%20thick%20and%20somewhat%20stiff,%20about%202%20additional%20minutes.%20Set%20aside%202/3%20cup%20of%20the%20meringue.%20Fold%20the%20remaining%20meringue%20and%202%20teaspoons%20finely%20grated%20lemon%20zest%20into%20the%20almond%20mixture.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20250%20degrees%20F.%20Line%202%20baking%20sheets%20with%20parchment%20paper.%3C/p%3E%3Cp%3ELightly%20dust%20a%20sheet%20of%20parchment%20or%20wax%20paper%20with%20confectioners%E2%80%99%20sugar%20and%20place%20the%20dough%20on%20the%20paper.%20Flatten%20the%20dough,%20lightly%20dust%20it%20with%20confectioners%E2%80%99%20sugar,%20and%20another%20piece%20of%20parchment%20or%20wax%20paper%20on%20top.%20Roll%20the%20dough%20between%20the%20paper%20until%20it%20is%20about%201/4-inch%20thick.%3C/p%3E%3Cp%3EGently%20peel%20off%20the%20top%20piece%20of%20wax%20paper%20and%20then%20replace%20it%20on%20the%20dough.%20Flip%20the%20dough%20over%20and%20peel%20off%20the%20new%20top%20sheet%20of%20wax%20paper.%20This%20process%20will%20insure%20that%20the%20dough%20doesn%E2%80%99t%20stick%20to%20the%20bottom%20piece%20of%20wax%20paper%20after%20cutting%20with%20star%20cutter.%3C/p%3E%3Cp%3EUsing%20a%203-inch%20star,%20cut%20out%20cookies%20and%20place%20on%20prepared%20baking%20sheets,%20about%202%20inches%20apart.%20If%20necessary,%20reroll%20excess%20dough%20to%20make%20more%20cookies.%3C/p%3E%3Cp%3EUsing%20a%20small%20spoon%20or%20offset%20spatula,%20spread%20the%20reserved%20meringue%20over%20each%20cookie,%20insuring%20that%20the%20meringue%20doesn%E2%80%99t%20drip%20off%20the%20sides%20of%20the%20cookies.%20Press%20remaining%20almond%20pieces%20(about%205%20ounces)%20onto%20cookies%20in%20a%20decorative%20pattern.%3C/p%3E%3Cp%3EBake%20cookies%20until%20the%20bottoms%20are%20light%20golden%20brown%20and%20the%20meringue%20is%20set,%20about%2030%20minutes.%20Turn%20off%20the%20oven,%20open%20the%20door,%20and%20let%20the%20cookies%20sit%20in%20the%20oven%20for%20about%2010%20minutes%20to%20dry.%3C/p%3E%3Cp%3EOther%20gluten-free%20cookie%20recipes:%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20combine%201/2%20cup%20sifted%20confectioners%E2%80%99%20sugar,%2010%20ounces%20sliced%20almonds%20(3%20heaping%20cups),%20and%20cinnamon.%20Process%20until%20the%20nuts%20are%20finely%20ground,%20with%20a%20few%20larger%20pieces%20still%20present.%3C/p%3E
