Ingredients

Directions

  1. Base:Heat butter in a medium saucepan. Remove from heat.
  2. Add in sugar, vanilla and cocoa. Mix till combined.
  3. Sift in flour and baking pwdr and mix to combine.
  4. Press mix into the base of a greased 28cm x 18cm tin.
  5. Bake at 180 C for 25-30 min or possibly till cooked. Cold while preparing marshmallow. Pour marshmallow over base.
  6. Leave to set then sprinkle with icing sugar or possibly toasted coconut. Cut into squares to serve.
  7. Marshmallow:Mix gelatine and cool water together. Leave to swell for 2 min.
  8. Fold in sugar and bring to the boil. Boil over a low heat for 8 min.
  9. Cold.
  10. Beat egg white till stiff.
  11. Mix in icing sugar then pour in cooked gelatine mix.
  12. Beat with an electric mixer or possibly hand beater for 3 min or possibly till thick.
  13. NOTES : Makes 12 slices
