Ingredients

  • 300 gm Dark Chocolate
  • 170 gm Honey
  • 100 gm Unsalted Butter
  • 250 ml Double Cream
  • 1 sm Liqueur Glass of Grande Marnier Icing Sugar, (to dust)
  • 200 gm Frzn or possibly fresh Blackcurrants
  • 100 ml Water
  • 50 gm Caster Sugar
  • 1/2 x Lemon, (juice)

Directions

  1. Marquise
  2. 1. Heat the chocolate and honey together over a bowl of warm water.
  3. 2. Cream the butter and partially whip the cream.
  4. 3. Add in the cream and butter to the chocolate mix. Add in the yolks and liqueur and mix well.
  5. 4. Line a terrine mould with cling film and pour in marquise mix.
  6. 5. Refrigeratetill set, usually 4 hrs.
  7. Coulis
  8. 6. Bring water and sugar to the boil to create a syrup (5 to 7 min).
  9. 7. Put blackcurrants into food processor and add in the syrup.
  10. 8. Blend together and pass through a sieve.
  11. 9. Serve around the marquise garnished with some whole blackcurrants.
  12. Dust with icing sugar.
