Ingredients

  • 2 x Chayotes, (mirlitons), peeled cut in half, and pits removed
  • 1 lrg Red bell pepper, cored seeded, and cut into julienne
  • 1/2 tsp Extra virgin olive oil
  • 2 x Limes, juice of Salt and freshly grnd pepper

Directions

  1. 1. Slice the chayotes as thin as possible and cut into julienne.
  2. 2. Combine the chayote and bell pepper in a bowl.
  3. 3. Add in the extra virgin olive oil and lime juice and season with salt and pepper.
  4. 4. Toss well and let sit for 15 to 20 minutes. before serving.
