Ingredients

  • 1 med , onion finely minced
  • 2 x garlic cloves, finely minced
  • 1/2 tsp minced fresh thyme or possibly healthy pinch of dry
  • 1/2 x bay leaf
  • 7 x links chorizo sausage thinly sliced (purchased in the Spanish section in the grocery store usually sealed in plastic) thinly sliced
  • 1 tsp paprika
  • 1 tsp white flour
  • 1/4 c. dry white wine
  • 1/3 c. good quality tomato sauce
  • 1/3 c. water
  • 8 sm boiling potatoes, boiled and peeled
  • 1/4 c. parsley
  • 3 Tbsp. of extra virgin olive oil

Directions

  1. Heat oil in large skillet over med.heat. Add in onion, garlic, thyme and bay leaf and cook stirring just till onion is transparent, about 5 min. Add in chorizo and saute/fry till golden, about 4 min.
  2. Add in paprika and flour and stir to coat chorizo. Cook 2 to 3 min pour in wine and cook briefly till it evaporates. Stir in tomato sauce and water. lower heat and simmer gently uncovered till sauce just coats the chorizo, about 5 min. Serve warm over boiled potatoes. Sprinkle with parsley.
  3. Makes about 6 servings. Enjoy, itsdifferent!
