Ingredients

  • 1/4 c. Cornstarch
  • 1/2 tsp Sugar
  • 2 x Slightly beaten egg whites
  • 1 tsp Brandy
  • 2 whl chicken breasts, split, skinned, boned and cut into
  • 1 1/2 x Inch strips
  • 1/2 c. Cashews, Minced Fine (up To 1/4) Peanut oil

Directions

  1. In small bowl combine cornstarch and sugar; stir in egg whites and brandy.
  2. Dip chicken pcs in mix; then in nuts. Fry pcs in warm deep fat at 374 degrees till golden brown, about 45 seconds. Drain on paper towels.
  3. Makes 30appetizers.
