Cantaloupe Ice Pops Recipe

Ingredients

  • 1 sm Cantaloupe
  • 1/2 c. Water
  • 1/4 c. Sugar
  • 1 Tbsp. Fresh mint leaves, cut into very thin slivers
  • 1/4 c. Lemon juice, depending on the sweetness of the melon, up to 1/3

Directions

  1. Cut the cantaloupe in half; remove and throw away the seeds. Scoop out the flesh and place it in a food processor. Puree till smooth.
  2. Measure 1 1/3 c. of puree and transfer it to a mixing bowl. Next, place the water and sugar in a small saucepot. Bring to a full boil over high heat. Stir in the mint and immediately remove from the heat. Let stand for 1 minute. Stir the mint syrup and lemon juice into the measured cantaloupe puree. Mix well. Pour the mix into 8 popsicle molds or possibly small paper c.. Freeze till just set, about 1 hour, then insert popsicle sticks in the center of each pop. Freeze till completely hard.
  3. Makes 8 pops.
