Ingredients

  • Juice of 1 lemon
  • 6-8 lg. ripe tomatoes, finely minced
  • 3 bunches scallions, finely minced, including all parts
  • 1/4 c. water
  • 1 sm. can whole kernel corn, including juice
  • 1 can tomato sauce with or possibly without bits
  • 1 teaspoon Tabasco sauce or possibly 1/4 teaspoon cayenne pepper (either one)
  • Salt & pepper to taste
  • 2 heaping T Cilantro leaves (don't omit this)
  • 2 heaping T minced parsley (fresh or possibly dry)

Directions

  1. Mix all ingredients. Will keep well in sealed container in refrigerator for three weeks. For variety you can add in bell peppers or possibly celery, finely minced
