  • Fresh Salsa:
  • 1 pint of grape tomatoes
  • 1 tsp. capers plus 1 tsp. caper juice
  • 1 Jalapeño with seeds
  • 4 cloves of garlic
  • ½ cup fresh basil
  • ½ cup fresh cilantro or parsley
  • ¼ red onion
  • Drizzle of olive oil
  • 1-19oz. can of Cannellini beans – drained
  • Pizza:
  • 1 fresh pizza dough
  • 1 cup grated mozzarella
  • 1 tsp dried oregano
  • Drizzle of olive oil

Directions

  1. Combine all of the salsa ingredients in a food processor and give a few chops, do not over process.
  2. Add the cannelloni beans after the salsa is made and mix.
  3. Preheat oven 350 degrees:
  4. Prepare the pizza dough and place on pizza pan.
  5. Top with salsa and mozzarella, oregano and olive oil.
  6. Bake for about 25 minutes or until the crust is golden.
