Ingredients

  • 4 Tbsp. Virgin extra virgin olive oil
  • 2 x Garlic cloves peeled, sliced thin
  • 12 lrg shrimp (21 to 25 count) peeled, deveined
  • 1 x Lemon juiced and zested
  • 2 ounce Limoncello liqueur
  • 4 ounce Dry white wine
  • 1 bn Chives snipped 1/4" lengths
  • 4 slc Country style bread - 3/4" thick

Directions

  1. In a 12-inch to 14-inch saute/fry pan, heat oil over medium heat till just smoking. Add in garlic and toast light brown. Add in shrimp and cook 2 to 3 min, till bright red. Turn shrimp over and add in lemon juice, limoncello and wine and cook 1 minute.
  2. Meanwhile, grill or possibly toast the bread and place 1 slice on each plate. Divide the shrimp over the bread. Add in chives to pan and divide sauce over shrimp. Sprinkle with lemon zest and serve immediately.
  3. This recipe yields 4 servings as antipasto.
