This recipe is an old one from my 4-H leader, Mrs. Swarr. She said her grandma used to make it in a big, black iron kettle.

Directions

  1. Make brown flour by putting it in a small frying pan, and stirring constantly, until it is a sandy brown color (do not burn!).
  2. Dice the potatoes, onion and celery.
  3. Put in a large ketlle and cover with water.
  4. Cook until soft (save liquid).
  5. Add milk, and butter, Heat well, but do not boil.
  6. Stir in brown flour gradually, stirring constantly until it thickens.
  7. A hard boiled egg can be cut up and added before serving.
  8. Salt and pepper, to taste.

    Gotta try this. Not sure what the browning of the flour does but it intrigues me. Will let you know how it turns out once I get my round tuit back.

      It gives a flavor to the soup, but be very careful not to burn it. Like browned butter, it is flavorful but easily burns and can't be used. Good luck.
