Ingredients
- 1 cup butter, softened
- 1 cup brown sugar, firmly packed
- 3 eggs
- 1 teaspoon vanilla
- 1 tablespoon orange zest
- 1 cup flour
- 4 cups rolled oats (do not use instant)
- 1/4 cup wheat germ
- 1/4 All Bran (Bran Buds) crushed
- 1 cup shredded coconut
- 1 cup chopped pecans, toasted
- 1/2 cup semi-sweet chocolate chips
- Coating:
- 1/2 cup sugar
- 1 teaspoon cinnamon

%20with%20wool%20socks%20(from%20REI)%20and%20sandals%20(handmade%20from%20hemp)%20but%20that's%20their%20way%20of%20making%20a%20statement...I'm-a-salmon-loving-spotted%20owl-protecting-granola-eating-Nirvana-listening-Greenpeace-door-knocking-hiker-biker-EPA-vegan-soy-latte-drinkin'-Microsoftie!%20%20Hear%20me%20Roar!%20%20What%20kind%20of%20statement%20does%20a%20Redskins%20sweatshirt,%20khaki%20golf%20shorts%20and%20Converse%20All-Star-High%20Tops%20with%20white%20socks%20make%20on%20an%20OLD%20MAN?!?%20%20No%20offense%20intended%20to%20any%20shorts-wearing-wool-sock-hemp-sandal%20folks%20out%20there...I'm%20with%20you%20in%20spirit!%3C/p%3E%3Cp%3EIf%20I%20called%20these%20Breakfast%20Fiber%20Bars%20you%20wouldn't%20make%20them,%20let%20alone%20eat%20them.%20%20If%20I%20called%20them%20Breakfast%20Protein%20Bars,%20you'd%20say,%20%22been%20there,%20done%20that.%22%20%20Calling%20them%20Breakfast%20Cookies%20allows%20for%20a%20certain%20illusion...chocolate%20chips,%20toasted%20nuts,%20chewy,%20sweet%20coconut...all%20those%20things%20that%20make%20cookies%20taste%20so%20great...and%20guess%20what?%20%20THESE%20have%20all%20of%20that%20AND%20MORE!%20%20Orange%20zest%20is%20the%20underlying%20flavor,%20it's%20fresh%20and%20unexpected!%20%20Two%20of%20these%20cookies%20are%20a%20complete%20breakfast%20-%20at%20least,%20if%20you%20think%20of%20a%20breakfast%20that%20fills%20you%20up%20and%20makes%20you%20happy%20-%20plus%20each%20cookie%20has%20about%20100%20calories,%20making%20them%20a%20great%20snack%20as%20well...and%20here's%20the%20good%20part,%20they%20are%20loaded%20with%20vitamins%20and%20minerals%20thanks%20to%20Wheat%20Germ%20(it'll%20cure%20what%20ails%20you)%20and%20Bran%20Buds%20(it'll%20make%20you%20reg-lar)!%20%20But%20don't%20make%20the%20%20mistake%20of%20thinking%20they're%20granola%20cookies...because%20they%20taste%20much%20better%20than%20anything%20ganola-y...%20even%20if%20they%20are%20HEALTHY%20and%20GOOD%20FOR%20YOU!%20%20If%20you%20eat%20too%20many%20you%20just%20might%20break%20out%20your%20shorts,%20socks%20and%20sandals%20so%20go%20easy%20at%20first!%3C/p%3E%3Cp%3EI've%20been%20making%20these%20Breakfast%20Cookies%20for%20years%20-%20all%20of%20my%20friends%20and%20family%20have%20had%20them%20and%20have%20loved%20them.%20%20You're%20not%20going%20to%20stuff%20four%20in%20your%20face%20before%20you%20realize%20you've%20eaten%20four,%20like%20you%20might%20if%20you%20were%20eating%20Oreos%20or%20Tollhouse%20Cookies...these%20are%20dense%20and%20chewy%20and%20substantial...which%20is%20why%20they%20are%20the%20perfect%20on%20the%20go%20food%20for%20breakfast%20or%20snack...give%20these%20a%20try,%20I%20think%20you'll%20love%20them!%3C/p%3E%3Cp%3EBreakfast%20Cookies%20-%20Pots%20and%20Pins%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees.%20%20Spread%20pecans%20on%20small%20baking%20sheet%20and%20bake%20in%20oven%20for%207%20to%208%20minutes%20or%20until%20lightly%20brown%20and%20fragrant.%20%20Remove%20and%20allow%20to%20cool.%20%20Keep%20oven%20on.%20%20Place%20All%20Bran%20in%20a%20Zip-lock%20style%20bag%20and%20crush%20with%20a%20rolling%20pin.%20%20Set%20aside.%20%20In%20a%20large%20mixing%20bowl,%20combine%20butter%20and%20brown%20sugar%20and%20mix%20until%20smooth.%20%20Add%20in%20eggs,%20vanilla%20and%20orange%20rind%20and%20beat%20on%20low%20speed%20until%20well%20blended.%20%20Stir%20in%20flour%20and%20mix%20thoroughly.%20%20Add%20oats,%20wheat%20germ,%20crushed%20All%20Bran%20and%20blend%20well.%20%20Fold%20in%20coconut,%20cooled%20pecans%20and%20chocolate%20chips.%20%20(If%20you%20want%20to%20add%20more%20chocolate%20chips%20you%20can,%20but%20to%20keep%20the%20calorie%20count%20down%20I%20only%20add%20a%20few%20-%20just%20enough%20to%20make%20me%20think%20I'm%20eating%20a%20real%20cookie!%20%20You%20could%20also%20add%20raisins%20or%20Craisins,%20instead%20of%20chocolate%20chips.)%3C/p%3E%3Cp%3EMake%20the%20coating:%20%20In%20a%20small%20bowl%20combine%201/2%20cup%20sugar%20and%20cinnamon.%3C/p%3E%3Cp%3EScoop%20dough%20into%20balls,%20about%202-inches%20in%20diameter,%20and%20roll%20in%20cinnamon%20sugar%20coating.%20%20Place%20on%20cookie%20sheet%20and%20flatten%20slightly%20with%20the%20bottom%20of%20a%20glass.%20%20Cookies%20should%20be%20about%201/2-inch%20thick.%20%20Bake%20until%20lightly%20browned,%20about%2010%20to%2012%20minutes.%20%20Remove%20and%20let%20sit%20for%20a%20few%20minutes%20before%20placing%20on%20wire%20racks%20to%20cool.%20%20Makes%204%20dozen%20cookies.%3C/p%3E){kind=link}
