  1. In large nonstick skillet over medium heat, heat margarine and saute/fry potato and onion till tender.
  2. Pour in egg, sprinkle with pepper. Cook, stirring occasionally till mix is set. Divide egg mix proportionately between tortillas; top with cheese. Fold tortillas over egg mix. Top with tomato mixed with basil.
