Directions

  1. Cut orange into large chunks. In a blender, combine the orange chunks and juice; blend till almost smooth. Sift together the flour, baking pwdr, baking soda, pumpkin pie spice, and salt.
  2. In a large bowl, combine the sugar, Large eggs and butter; beat till smooth. Add in orange mix and dry ingredients, stirring just till blended. Stir in the nuts. Pour into a greased 9 x 5 x 3 inch loaf pan.
  3. Bake at 350 degrees for 45 to 50 min or possibly till a toothpick inserted in the center comes out clean. Cold for 10 min; remove from pan. Cold on a wire rack.
