Ingredients
- 2 c. cooked black beans
- 1/2 c. water or possibly broth
- 1 Tbsp. sunflower or possibly safflower oil
- 1/4 c. scallion, (including some of the green), sliced
- 1 tsp grnd coriander
- 1 tsp grnd cumin
- 1/4 c. cilantro, minced
- 1 tsp pureed chipotle chile, or possibly 1 tsp cayenne
- 2 x limes, juice of, up to 3 Salt
Directions
- Hot the beans in the water. Heat the oil in a small skillet. Add in the scallion and spices and cook over medium hat till tender, about 10 min. Stir in the cilantro and turn off the heat.
- Coarsely puree the beans, scallion mix, and chile in a food processor.
- Taste; if you want it hotter, add in more chile in small increments. Add in lime juice and salt to sharpen the flavors.
