Ingredients

  • 2 c. cooked black beans
  • 1/2 c. water or possibly broth
  • 1 Tbsp. sunflower or possibly safflower oil
  • 1/4 c. scallion, (including some of the green), sliced
  • 1 tsp grnd coriander
  • 1 tsp grnd cumin
  • 1/4 c. cilantro, minced
  • 1 tsp pureed chipotle chile, or possibly 1 tsp cayenne
  • 2 x limes, juice of, up to 3 Salt

Directions

  1. Hot the beans in the water. Heat the oil in a small skillet. Add in the scallion and spices and cook over medium hat till tender, about 10 min. Stir in the cilantro and turn off the heat.
  2. Coarsely puree the beans, scallion mix, and chile in a food processor.
  3. Taste; if you want it hotter, add in more chile in small increments. Add in lime juice and salt to sharpen the flavors.
