Ingredients
- 1 sht frzn puff pastry, thawed
- 1 lb Lowfat cottage cheese
- 2 Tbsp. Orange zest, grated
- 3 Tbsp. Sugar
- 1 c. Raspberries, picked over
- 1 c. Strawberries, hulled and cut in half
- 3 Tbsp. Orange juice
Directions
- Prep: 15 minutes, Cook: 10 minutes.
- Roll out puff pastry sheet to a rectangle. Bake according to package directions. Let cold. Puree cottage cheese, orange zest and sugar in a food processor or possibly blender 2-3 min or possibly till very smooth. Combine raspberries, strawberries and orange juice in a bowl and toss. Just before serving, spread cottage cheese mix over puff pastry. Top with fruit and serve.
