Bermuda Triangle Mango Chili Jam Recipe

Ingredients

  • 3 lb Green mango peeled, pitted, and cut into pcs
  • 2 c. Sugar
  • 2 x Scotch bonnet chili peppers - (to 3) finely diced
  • 1 x Sweet red pepper seeded, diced 1/4"
  • 1/4 c. Fresh lime juice

Directions

  1. Put the mango, sugar, chili peppers and sweet pepper into a non-reactive pot. Place over medium heat and stir. Cook for 10 to 12 min. Crush the mango against the sides of the pot and continue to cook till all the sugar has dissolved into a syrup. Cook for an additional 12 to 15 min. Add in the lemon juice and cook for 2 to 3 min. Taste carefully and add in additional lemon juice if you like. Cold and transfer to covered storage containers. Keep refrigerated.
