%3C/p%3E%3Cp%3ESo%20did%20the%20experiment%20succeed?%20It%20did.%20I%20can%20highly%20recommend%20the%20combination%20of%2066%20percent%20Valrhona%20chocolate%20and%20super-smoky%20Scotch.%3C/p%3E%3Cp%3EI%20brought%20some%20of%20these%20smoky%20Scotch%20truffles%20to%20a%20friend's%20holiday%20party%20and%20was%20rewarded%20with%20serious%20groans%20of%20pleasure.%20I%20made%20a%20big%20batch%20for%20our%20Food%20Bloggers%20Los%20Angeles%20annual%20holiday%20cookie%20and%20cookbook%20swap,%20too,%20and%20got%20compliments.%20I%20think%20you'll%20like%20them.%3C/p%3E%3Cp%3ENote:%20The%20better%20the%20chocolate,%20the%20better%20the%20truffles,%20period.%20I%20rolled%20my%20truffles%20in%20festive%20silver%20sprinkles%20because%20it's%20December,%20but%20normally%20I%20just%20dust%20them%20with%20dark%20cocoa%20powder.%20I%20love%20the%20rustic%20look%20of%20misshapen%20truffles%20dusted%20in%20cocoa%20-%20it%20makes%20them%20look%20like%20the%20fungal%20truffles%20for%20which%20they%20were%20named.%3C/p%3E%3Cp%3ESuper%20smoky%20Scotch%20whiskey%20chocolate%20truffles%3C/p%3E%3Cp%3Eby%20Erika%20Kerekes%20%20December-13-2012%3C/p%3E%3Cp%3EChocolate%20truffles%20are%20one%20of%20the%20easiest%20and%20most%20impressive%20chocolate%20candies%20you%20can%20make.%20These%20rise%20to%20a%20new%20level%20with%20the%20addition%20of%20an%20extremely%20smoky%20Scotch%20whiskey.%20A%20perfect%20homemade%20gift%20for%20the%20holidays.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EChop%20the%20chocolate%20into%20relatively%20small%20pieces%20and%20put%20it%20in%20a%20glass%20or%20ceramic%20bowl.%20(Yes,%20the%20kind%20of%20bowl%20is%20important:%20You%20may%20need%20to%20put%20the%20bowl%20in%20the%20microwave,%20so%20metal%20is%20out,%20and%20plastic%20will%20make%20the%20truffles%20taste%20funny.)Heat%20the%20cream%20until%20steaming%20but%20not%20boiling%20-%20I%20do%20this%20in%20the%20microwave.%20Pour%20the%20hot%20cream%20over%20the%20chopped%20chocolate%20and%20let%20it%20sit%20about%202%20minutes.%20Whisk%20the%20chocolate%20and%20cream%20together%20until%20all%20the%20chocolate%20is%20melted.%20If%20the%20mixture%20is%20tepid%20and%20you%20still%20see%20lumps%20of%20chocolate,%20put%20the%20bowl%20in%20the%20microwave%20for%2015%20seconds%20and%20stir%20again.%20Continue%20until%20the%20mixture%20is%20smooth.%20Add%20the%20Scotch%20and%20whisk%20again%20until%20smooth.Put%20the%20bowl%20somewhere%20relatively%20cool%20(i.e.%20not%20in%20the%20sun)%20and%20let%20the%20mixture%20sit%20at%20room%20temperature,%20uncovered,%20for%20about%202%20hours.%20It%20will%20harden%20some%20but%20will%20not%20be%20fully%20solid.%20Some%20people%20prefer%20to%20put%20their%20truffle%20mixture%20in%20the%20refrigerator%20and%20then%20scoop%20it%20like%20frozen%20ice%20cream,%20but%20I%20like%20to%20have%20my%20truffle%20mixture%20more%20the%20texture%20of%20soft-serve%20-%20I%20think%20it%20makes%20for%20prettier%20truffles%20in%20the%20end.%20It's%20up%20to%20you.Line%20a%20baking%20sheet%20with%20parchment%20paper.%20Take%20a%20small%20spring-loaded%20scoop,%20or%20two%20spoons,%20and%20dish%20out%20about%201%20Tablespoon%20of%20the%20mixture%20onto%20the%20parchment-lined%20sheet%20for%20each%20truffle.%20They%20will%20look%20rustic%20and%20misshapen,%20and%20that's%20fine.%20When%20you've%20used%20all%20the%20mixture,%20put%20the%20tray%20in%20the%20refrigerator,%20uncovered,%20and%20let%20harden%20at%20least%202%20hours.To%20finish%20the%20truffles%20remove%20them%20from%20the%20refrigerator.%20If%20you're%20dusting%20them%20in%20cocoa%20powder,%20put%20about%20half%20a%20cup%20of%20cocoa%20powder%20in%20a%20plastic%20container%20with%20a%20lid,%20put%20a%20handful%20of%20the%20truffles%20in,%20put%20on%20the%20cover,%20roll%20them%20around,%20and%20then%20lift%20them%20out%20into%20a%20strainer%20and%20shake%20off%20the%20excess%20cocoa%20powder.%20If%20you're%20using%20sprinkles,%20you'll%20want%20to%20roll%20each%20truffle%20in%20your%20palms%20a%20little%20to%20melt%20the%20outside%20layer%20before%20rolling%20them%20in%20the%20sprinkles%20-%20this%20will%20help%20the%20sprinkles%20stick.%20Store%20in%20a%20covered%20container%20in%20the%20refrigerator%20up%20to%202%20weeks.%20Amaze%20your%20friends,%20family%20and%20coworkers.%3C/p%3E%3Cp%3EDetails%3C/p%3E%3Cp%3EPrep%20time:%2015%20mins%20Cook%20time:%204%20hour%20Total%20time:%204%20hour%2015%20mins%20Yield:%20approximately%203%20dozen%20truffles%3C/p%3E){kind=link}
