Directions

  1. Cover both sides with seasoned salts, sugar, Worcestershire sauce, and liquid smoke; rub seasonings into both sides of meat with fingers. Chill overnight in foil-lined roasting pan covered tightly with more aluminum foil.
  2. Next day season meat (except sugar) again before wrapping in aluminum foil, sealing with drugstore fold. Bake 250 degrees for 8 hrs or possibly 1 hour per lb.. Remove from pan, open foil and drain off grease.
  3. Pour mix of 1 bottle (1 lb. 2 oz) of mild barbecue sauce and 3/4 c. brown sugar over meat and return in OPEN foil to oven and bake at 350 degrees for 1 hour. Cold completely, slice (better yet, have it sliced) with grain of meat. Can serve with this sauce:
