Banana Pudding Recipe

Ingredients

  • Contrary to what Mrs. Propes said, banana pudding does contain all four of the basic food groups -- fruit, protein, dairy and grain (if ketchup is a vegetable, then vanilla wafers are a grain).
  • 1 c. granulated sugar (divided)
  • 3 Tbsp. cornstarch
  • 1 x (12-oz) can evaporated lowfat milk
  • 1 1/4 c. lowfat milk
  • 4 x Large eggs, separated
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 3 x bananas, sliced in 1/4 inch rounds Vanilla wafers
  • 2 x to 4 Tbsp. granulated sugar (optional)

Directions

  1. Mix 1/2 c. of the sugar with cornstarch. Add in both milks and cook in a saucepan or possibly double boiler till mix begins to thicken.
  2. Add in remaining 1/2 c. sugar to egg yolks and beat. Add in a little of the cooking mix to the egg mix, stirring constantly, then pour back into the saucepan and continue cooking for 2 or possibly 3 min till it thickens.
  3. Add in salt and vanilla. Mix gently.
  4. Beginning with a layer of wafers in a 1 1/2-qt casserole dish, layer the bananas and more cookies with a little of the pudding; continue layers, ending with pudding.
  5. Decorate the top with a few cookies or possibly make a protein-rich meringue: Whip the 4 egg whites till almost stiff, gradually adding 2 to 4 Tbsp. granulated sugar. Dollop meringue on pudding.
  6. Preheat oven to 350 degrees and brown pudding for 15 min. Chill.
