Baked Eggs with Bacon, Spinach, & Goat Cheese Recipe

Ingredients

  • Nutrition Information (for JUST the egg cup, baguette not included; calculated using thick-cut bacon.)
  • 4 eggs
  • 6 slices applewood smoked bacon (I’m sure you could use whatever bacon you usually use, but this is just especially delicious)
  • 4 cups baby spinach
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon coarsely ground mustard (I use Zatarain’s Creole Mustard; Walmart of all places has an excellent house brand)
  • 2 ounces goat cheese, crumbled
  • Toasted baguette slices (I used a sourdough baguette and I wasn’t sorry)
  • Salt and freshly ground black pepper to taste
