Ingredients
- 1 lb bacon, cut in 1" pcs
- 1 c. minced onions
- 3 Tbsp. margarine
- 1/4 c. flour
- 1/2 tsp pepper
- 2 1/2 c. lowfat milk
- 1/2 c. grated Parmesan cheese
- 3 c. cooked rice
- 2 sm zucchini, shredded
- 1 x (2 1/4 ounce.) can sliced ripe olives, liquid removed Paprika
Directions
- In fry pan cook bacon on medium heat till crisp; drain. In same fry pan, cook onion in margarine on medium heat 5 min; blend in flour and pepper.
- Gradually add in lowfat milk; cook, stirring till thickened.
- Stir in cheese, bacon, rice, zucchini and olives. Pour into lightly greased 12"x8" baking pan; sprinkle paprika on top. Bake, covered with foil, at 375 degrees for 20 min. Remove foil, continue baking at 375 degrees for 10 min.
