  • 8 streaky bacon rashers, sliced
  • 150 gm plain flour
  • 4 large eggs
  • 200 ml milk
  • 50 gm butter, melted
  • 150 gm tasty cheese, grated
  • sea salt & freshly ground pepper
  • 4 spring (green) onions, chopped
  • cooking oil spray

Directions

  1. Preheat oven to 200°C fan forced (220°C normal).
  2. Cook the bacon in a non-stick pan until crispy. Drain well.
  3. Mix the flour with the eggs in a large bowl until well combined using a wooden spoon. Add the milk and butter and whisk well.
  4. Then add the cooked bacon with any cooking juices, together with the cheese, a little salt, plenty of ground pepper and the spring onion. Mix well.
  5. Pour the batter into a lightly oiled gratin (or ovenproof dish) and cook in the oven for about 35 mins until puffed and golden.
  6. Serve with a simple green salad on the side.
