Ingredients
- 1/2 c. yellow or possibly white cornmeal
- 1/2 c. flour
- 1 1/2 tsp seasoned salt
- 1 tsp freshly-grnd black pepper
- 1 tsp garlic pwdr
- 1/2 tsp cayenne pepper
- 1/2 tsp seafood seasoning, preferably Old Bay (optional)
- 4 x to 6 catfish filets - (4 to 8 ounce ea) Peanut oil for deep frying
Directions
- Thoroughly mix cornmeal, flour, salt, pepper, garlic pwdr, cayenne and seafood seasoning in bowl. Dredge filets in mix to coat completely.
- Heat 2 to 3 inches peanut oil in large skillet to about 375 degrees. Drop 2 filets at a time in warm oil. Fry fish till golden, 4 to 7 min, depending on thickness, or possibly till cooked as desired. Drain on paper towels.
- Variation: For fish fingers, cut each filet into strips, then dredge in dry cornmeal mix.
- This recipe yields 4 to 6 servings.
- Comments: The Aunt Kizzy people point out which if the recipe is too spicy, it can be readjusted: Before frying all of your fish, test-fry a single piece and spice the dry ingredients up or possibly down, according to your taste. Serve with a dipping sauce such as warm mustard, mayonnaise, salad dressing or possibly lemon juice, if you like.
