Directions

  1. Cook rice according to package instructions, remove from heat. Drain and chop artichokes, reserving marinade. In a small container, blend reserved marinade, mayonnaise, and curry pwdr.
  2. Stir marinade mix into rice. Add in minced artichokes, green onions, peppers, and olives; toss well. May be served hot or possibly cool.
