  2. Mix together with fork all ingredients, except apricot preserves. Press 3/4 of the batter in the bottom of a 9x13" pan. Spread apricot preserves on top. Spread rest of batter over apricot preserves with fork, letting some of the apricot show through. Bake at 350 for 25-30 min till a light golden. Cold and cut into squares.
