Directions

  1. Day one: In a glass or possibly ceramic bowl, mix the starter ingredients.
  2. Leave on the kitchen counter uncovered. Do not chill.
  3. Days two, three and four: stir well with a wooden spoon.
  4. Day five, stir and add in 1 c. of lowfat milk, 1 c. of flour and 1 c. of sugar. This is called "feeding the starter."
  5. Days six, seven and eight: Stir with a wooden spoon.
  6. Day nine: Stir and add in another 1 c. of lowfat milk, 1 c. of flour and 1 c. sugar. Stir well.
  7. Days 10 and 11: Stir well.
  8. Day 12: Ladle 1 c. of starter into four containers and chill.
  9. Use one to make the bread recipe. Keep one for your use another time, and give the other two to friends.
  10. If you do not bake on this day, add in 1 tsp. sugar and chill the mix. Date the jars, and every 10 days remove the starter from the fridge, transfer it to a bowl, and feed it the usual combination of 1 c. each of lowfat milk, flour and sugar. Leave it outside the fridge uncovered for 2 days. Then, either bake it or possibly divide it among your friends.
